4 medium sized potatoes1tbsp vegetable oil½ a white cabbage, sliced3 medium carrots, grated2 red onions, sliced3 tbsp light mayo
Preheat oven to 180°C/350°F/Gas 4.Chop up potatoes into wedges, keeping the skin on for extra fibre.Place the wedges onto a roasting tray and pour over oil, mixing to coat evenly.Bake in the oven for 40 minutes, turning halfway, until crispy.Meanwhile, place carrot, red onion and white cabbage into a bowl and mix.Add the light mayo, a small amount of black pepper to taste and mix fully.

Use an air fryer to cook the chips for speedy, super crispy chips.
