Ingredients
2 tins red kidney beans
1 onion, finely chopped
1 tbsp olive oil
1 garlic clove, finely chopped
1 green pepper, finely chopped
1 medium carrot, grated
1 egg
4 crackers, crumbled into breadcrumbs
1 tbsp tomato puree
Method
Pre-heat the oven to 200⁰C/400⁰F/Gas 6.
Drain the beans and mash with a fork in a bowl.
Sauté the onion in oil for 3 minutes. Add the garlic, green pepper and carrot and cook for 5 more minutes.
Combine beans, vegetables, tomato puree, egg and crackers together and shape in to 8 small burgers then bake in oven for 25 minutes until golden.
TIPS AND TWEAKS
Go light and serve with a side salad and a big dollop of natural yoghurt.
