Begin on the stovetop, end within the oven—this frittata is straightforward and scrumptious. A light-weight mixture of egg whites and egg, tender spinach and chunky potatoes makes this dish a hearty vegetarian meal for breakfast, brunch or dinner. Ensure your nonstick skillet is oven-safe. A well-seasoned cast-iron pan is ideal.

Spinach & Potato Frittata

Substances

2 tbsp olive oil 
6 child pink potatoes, thinly sliced 
1/2 cup (80g) finely chopped pink onion 
3 cups (85g) child spinach leaves, torn 
2 tsp contemporary thyme leaves 
4 massive eggs 
6 massive egg whites
½ cup non-fat milk 
½ tsp salt 
½ tsp black pepper, divided 
⅓ cup (47g) crumbled goat cheese
4 slices complete wheat bread, toasted  

Instructions

Preheat the oven to 350°F (177°C).

Add olive oil to the skillet over medium warmth. Add potatoes and onion; cook dinner lined, for 10 minutes, stirring sometimes, till potatoes are tender. Add spinach and thyme; cook dinner lined, for two–3 minutes or till spinach wilts, utilizing tongs to sometimes stir the spinach.

Whisk collectively eggs, egg whites, milk, salt, and 1/4 tsp pepper. Pour the egg combination over the spinach and potato combination and fold gently with a rubber spatula to mix. Cook dinner over medium warmth for 3 minutes or till the perimeters start to set, then switch the skillet to the oven.

Bake for 10–12 minutes, or till the frittata is totally cooked. Take away from the oven and sprinkle with goat cheese and the remaining 1/4 tsp pepper. Minimize into 4 wedges and serve with a slice of complete wheat toast.
