Ingredients
2 small sweet potatoes, sliced into fries
¼ tsp olive oil
2 skinless chicken breasts, finely chopped
4 tbsp water
1 egg, lightly beaten
4 crackers, crushed
Method
Preheat oven to 200°C/400°F/Gas 6.
Put the sliced sweet potato on a baking tray, drizzle over the olive oil, season lightly and bake in the oven for 40 minutes.
Meanwhile, combine the egg and water in a bowl.
Put the crushed crackers in a shallow dish.
Take a spoonful of chopped chicken and gently dip into the egg mix then roll in the crackers until lightly coated and place on a lined baking tray.
Bake for the last 15 minutes along with the sweet potato chips until cooked through and golden brown.
