INGREDIENTS
Dressing
3 tbsp soy sauce
3 tbsp rice wine vinegar
1 tsp sugar
1 tsp chili oil
1 tsp toasted sesame oil
1 clove garlic, finely minced
Salad
12 oz small cucumbers
1/3 cup roasted peanuts
Fresh cilantro leaves
Red chili flakes to taste
DIRECTIONS
Whisk all dressing ingredients together.
Finely grind the peanuts (you can use a food processor, rolling pin, meat tenderizer, or something similar) until you get your desired consistency. You want them to be very fine but not dust.
Thinly slice the cucumbers diagonally.
Add the cucumbers in a bowl and toss with enough dressing to coat thoroughly. Sprinkle the crushed peanuts, chili flakes, and cilantro leaves on top.
Serve immediately or chill until ready to serve.
