Ingredients
LEMON BLUEBERRY CRISP
Crisp:
2 Lemon Cake Quest Bars
2 tbsp zero calorie sweetener
Pinch salt
3 tbsp butter, room temperature
Filling:
4 cups blueberries, fresh
1 tbsp lemon juice
1 tbsp zero calorie sweetener
1 tbsp cornstarch
Method
Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
Break the Quest Bar into small pieces and place them on the baking sheet. Bake for 7-8 minutes and golden. Let cool completely.
Once cooled, add the bar pieces to a blender and blend until fine crumbles form and transfer to a mixing bowl with the zero calorie sweetener, salt and combine. Add in the butter and use a fork to mix. Set aside.
In a bowl, stir together the filling ingredients and then distribute between 6 ramekins. Top with crisp and bake for 15 minutes.
Serve warm with ice cream if desired.
