The tropical flavors of juicy, ripe pineapple and wealthy coconut milk mix to make these straightforward popsicles. They’re dipped in a super-simple, 2-ingredient darkish chocolate shell topping and sprinkled with toasted coconut for a decadent contact.

Energetic time: 10 minutes | Complete time: 10 minutes, plus 8 hours freezing time

Components

1 (13.5-oz./400 ml) can coconut milk
1 cup (165g) pineapple chunks
1 tsp vanilla extract
3/4 cup (120g) unsweetened darkish chocolate chips
1 1/2 tsp coconut oil
1/3 cup unsweetened coconut flakes, frivolously toasted

Instructions

In a blender, mix the coconut milk, pineapple, and vanilla and course of till clean. Pour into 6 popsicle molds and freeze till set, about 8 hours.

In a microwave-safe bowl, mix the chocolate and coconut oil. Microwave in 30-second intervals, stirring between every, till melted, about 2 minutes complete. Place the coconut flakes in a small bowl.

Line a plate with parchment paper. Unmold one popsicle and spoon the chocolate combination excessive quarter of the pop, then instantly sprinkle with about 1 tbsp coconut.
