Chicken Marinade Ingredients
¼ cup olive oil
2 tbsp lemon juice
2 tbsp honey
1 tbsp dijon mustard
2 tsp minced garlic
2 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
Sauce Ingredients
½ plain Greek yogurt
¼ cup barbecue sauce
2 tbsp dijon mustard
1 tsp lemon juice
2 tbsp honey
¼ tsp salt
¼ tsp minced garlic
â…› tsp pepper
Sandwich Ingredients
4 4 oz cuts of chicken breast
4 whole wheat buns
Lettuce
Sliced tomato
Sliced onion
Sliced cheese
Directions
In a small bowl, combine the marinade ingredients.
Place the four cuts of chicken in a shallow dish. Pour the marinade over the chicken. Cover the chicken and marinate in the refrigerator for 1 hour.
On a grill or skillet, cook chicken over medium heat for around 3 minutes per side (or until internal temperature is 165 degrees Fahrenheit). Once the chicken is finished cooking add the sliced cheese.
In another small bowl, combine the sauce ingredients.
Assemble the sandwiches by spreading sauce on each side of the buns, adding the lettuce, tomato, onion, and chicken.
