BUTTERNUT SQUASH TORTILLA CHIP PROTEIN SOUP

Yields: 6 servings |  Serving Size: 1/6 of recipe

Calories: 170  | Protein: 8g  | Fat: 11g | Net Carb: 9g

Total Carb: 11g   | Sugar: 3g

Ingredients

BUTTERNUT SQUASH TORTILLA CHIP PROTEIN SOUP

2 tbsp olive oil, separated
1 medium butternut squash, peeled and cubed
1 white onion, diced
1 clove garlic, diced
2 cups chicken broth
½ tsp salt
ÂĽ tsp black pepper
1 tsp sage
â…“ cup heavy cream
2 Bags Quest Chili Lime Tortilla Chips

Method

Preheat the oven to 425 F and prepare a pan with parchment paper.
Drizzle the squash with 1 tablespoon of olive oil. Cook for 30-40 minutes and tender.
Meanwhile, add the remaining 1 tablespoon of olive oil to a pot over medium heat.
Once hot, add the onion and stir. Cook until tender and golden, about 4-5 minutes.
Add in the garlic and cook for 1-2 minutes. Transfer to a blender along with the cooked squash, salt, pepper, sage and 1 cup of broth.
Blend until smooth and then return to the pot. Stir in the remaining broth and heavy cream and simmer for 5 minutes before transferring to bowls and serving with Quest Chili Lime Tortilla Chips on top.
